Sesame Crust 6T unsalted butter 1/4 c packed brown sugar 1/3 c black sesame seeds 5 oz chocolate wafers (I used teddy grahams) pinch of salt Filling: 2 small sweet potatoes (about a pound) 1/2 c packed brown sugar 3 T unsalted butter, melted 2 T white miso 2 egg yolks 1 egg 1 c heavy cream +more heavy cream for serving Do ahead: roast sweet potatoes in foil in a 350 degree F oven for 60-90 minutes until the potato is cooked through. This depends on the size of your sweet potato. Melt the butter for the crust and mix in with the brown sugar Finely grind the sesame seeds (spice mill or mortar and pestle) Pulse the cookies in a food processor until finely ground. Pour in sesame seeds, salt, and butter micture. Pulse to combine. Press the mixture firmly onto the bottom and up the sides of a 9" pie dish. Bake in a 350 degree F oven until slightly darker in color 15-18 minutes. For the filling, have the oven preheated to 350 degrees F. Pulse the cooked sweet potatoes in the food processor until smooth. In a large bowl, whisk the potato puree, brown sugar, butter, miso until smooth. Then add in the egg and egg yolk and whisk to incorporate. Then, add in the heavy cream and whisk. Pour the filling into the crust and bake for 50-60 minutes. TURN THE OVEN DOWN TO 300 TO COOK THE PIC CUSTARD EVENLY. The pie will be slightly wobbly in the center. Remove the pie from the oven and let cool to room temperature before moving it to the refrigerator to set until serving. Serve with whipped cream!
