
OPEN HERE FOR THE FULL RECIPE Subscribe at this link https://goo.gl/oZ7Zxn Ingredients: 2 ¼ c milk 1 c heavy cream 4 egg yolks ½ c sugar, ¼ sugar divided Flavor Options: ½ teaspoon vanilla extract 1 t matcha green tea powder dissolved in 1 T of warm water 1 T of strawberry puree Topping Options Melted dark chocolate Melted white chocolate Chopped walnuts Toasted coconut Chocolate sprinkles In a medium saucepan, heat milk, cream, and ½ c sugar over medium heat for 5 minutes until the sugar is dissolved. Combine egg yolks and ¼ c of sugar. Whisk until mixture is pale yellow. Add in ⅓ of the cream mixture into the egg mixture. Return the eggs mixture into the rest of the cream. Heat the custard over low heat for 5-8 minutes or until the custard coats the back of the spoon. Separate the custard into three containers. Flavor the custard with optional flavorings. Pour the mixture into the popsicle molds. Freeze for 6 hours or overnight. Right before serving, melt the dark chocolate over a bowl of simmering water. Melt the white chocolate in the microwave in 30 second intervals. Decorate the popsicles and enjoy! Makes 6 5.5 oz popsicles. Today we’re making gelato popsicles. And there’s no special machine needed. Today’s flavors are vanilla bean, green tea, and strawberry All three flavors start with the same base of milk, cream, and ½ c of sugar. Whisk over medium heat until the sugar dissolves Take your egg yolks and mix in an additional ¼ c of sugar and get ready to temper the eggs. This is the part where you pour a little bit of the warm mixture into the eggs to bring them up to temperature and then pour in the eggs back into the cream. Cook the custard back on the heat for 5 more minutes until it thickens like this. The custard is ready when it passes the back of the spoon test. Pour the mixture through a strainer. I’m pouring it into a separate jug for each flavor. First is the vanilla extract. I’m using vanilla bean paste because I like the speckles. I dissolved matcha green tea powder with a little water to mix into this custard And I made strawberry puree to mix in this custard To make this I took frozen strawberries and blitzed it up in a blender. Time to take out my favorite popsicle maker. It’s really just a mold and you can buy it online or at retail store. Pour in the liquids. Pop on the lids -- all six of them-- and freeze for 6 hours, overnight, or until it looks like this, this and this. The vanilla popsicle is decorated with melted dark chocolate and walnuts The green tea popsicle is decorated with melted white chocolate and toasted coconut And the strawberry popsicle is decorated with melted white chocolate and sprinkles.
