
OPEN ME' Manicotti Recipe for you mobile users: https://youtu.be/sgT6TTMN0HQ Subscribe at this link https://goo.gl/oZ7Zxn Recipe For the Dough 2 ½-3 c all purpose flour 1 T sugar 1 t salt 1 T yeast 1 c warm water (100 degrees F) 2 T vegetable oil Sauce: 3 cloves garlic ½ onion small diced 2 T olive oil 1 t salt ½ t pepper ½ t red pepper ½ t oregano 28 oz crushed tomatoes Fillings and Extras: 4 oz pepperoni ½ c basil about 12 basil leaves 6 oz mozzarella (8 slices) ¼ c shredded parmesan cheese 2 T corn meal for under the calzones. To make the dough Combine flour with sugar, salt, and yeast. Give that a little stir before adding in vegetable oil, and a cup of warm water. Mix this with the dough hook or by hand until the dough is smooth and elastic about 10 minutes. If your dough is not pulling away from the sides of the bowl, add in up to ½ more flour. You want the dough to pull cleanly from the sides of the bowl. Cover and let that proof somewhere for 1 to 2 hours. Part 2 is the sauce. Heat olive oil on medium heat in a medium sauce pan. Add in the garlic and onions. Cook until the vegetables are translucent. Add in the sugar and all the slices. Then add in the tomatoes. Lower the heat to a simmer and let simmer for 20 minutes. Turn off the heat and set aside to cool. When your dough is proofed (doubled in size) take out of the bowl and roll into a big ball. Divide the ball into four equal pieces and shape each piece into a ball. With a rolling pin, roll each piece out into a 7 in diameter circle. Fill one half of the dough with one slide mozz, 1 T sauce, fillings, another T sauce, and another slice of mozz. Cover and seal the dough very well. Repeat with all four calzones. Line a baking sheet with parchment paper and sprinkle with some corn meal. Move the calzone onto the sheet and cut vents on the top of each calzone. Bake in the oven for 20-25 minutes or until the dough is golden brown and delicious. Remove from tray to a cooling rack. Use the extra sauce for dipping and enjoy!
